Wild Ivory King Salmon Season!! This is the creme dela crème of Wild King Salmon’s. Many people have asked the question “how is a salmon white?”… and the answer is no one really knows! What we do know is that most salmon get their typical red or pink color from carotene in the food they eat (crustaceans such as shrimp and krill), but white or Ivory Kings are genetically predisposed with an extra enzyme to process carotene rather than collect it. It is said that less the 1 out of 100 King salmon are “Ivory’s”, making them rare and difficult to find, and you can’t tell whether the Salmon is Red or Ivory until you cut into the belly. Both Ivory and Regular Wild King look identical from the outside. The Ivory salmon specifically is a bright white fleshed King salmon native to certain rivers of southeast Alaska such as: Resurrection Bay, Bristol Bay, and Sitka Sound. Ivory salmon tends to be milder, silkier and more buttery in flavor than regular Kings. (See the picture below for a comparison between a Wild King filet and Ivory King filet.)

So stop by the Blue Point Grill and try the Ivory King Salmon Grilled with lemon butter and cooked to perfection! Or pick up some Ivory King Salmon from Nassau Street Seafood and have it at home!
